A Year Is Long Enough to Know Better
We’re celebrating our 1-year of pizza at Valholl this week.
A year ago this Thursday, we rolled our ovens up to Valhöll Brewing and hoped for the best. We didn’t know much about what the future held. We just knew how to make pizza.
What surprised me most this year wasn’t the growth, but how much life squeezed itself into pizza nights. Conversations around the stand. Celebrations tucked into weeknights. Hard weeks softened by good beer and better company. Moments when people lingered not because they needed another pizza, but because they weren’t quite ready to leave. (Sorry, Lyndsi!)
When we started, my goal was simple: build a successful pizza business. I still want that. But this year has taught me that the usual turn-and-burn logic (more speed, more volume, more throughput) isn’t going to create the kind of place I want to be part of.
What we’re really protecting here is pretty simple. We’re protecting the feeling that you can show up as you are and not be rushed. That you don’t have to order fast, eat fast, or move along to make room for the next person. That if you’ve had a long week, this can be a place where things slow down for a bit. And that if you don’t want a pizza, you can still come chat for a while.
The truth is, places like Valholl don’t just happen. They exist because someone chooses not to squeeze every last dollar or minute out of the night. Because sometimes it’s better to let things take the time they take.
A year in, I know this much for sure: it’s easy to chase more. It’s harder – and more important – to take care of what’s already here.
